Michael Sutherland's Training & background

My passion for cooking began at the age of around ten years old and was influenced by my mum as she was the Tea Lady for the local cricket team. Mum would make scones, roast potatoes, sandwiches, brownies, jam tarts and all things delicious!

I became very keen to get fully involved with baking which then influenced me into choosing a catering career in school. I achieved an A* in Food Technology, and then began an NVQ Diploma Level 1 in Catering and Hospitality at the very young age of fourteen; learning everything from the basics in the kitchen to front of house.

I got my first job as a Commis Chef at Herstmonceux Castle cooking for the students and doing private wedding functions and special events. I moved away from Sussex to study at the Westminster Kingsway College (Jamie Oliver went there and I have the same qualifications as him) to do my NVQ Levels 2 & 3 in Professional Catering. This was a massive stepping stone in my career as I met lots of famous chefs and learnt so much from their creativity and techniques.

Previous Restaurant Experience & Awards

For a few years I worked in restaurants in and around London Brighton and Tunbridge Wells, gaining as much experience as I could in a variety of establishments to further my knowledge and understanding of the trade.

I was very pleased to be offered Head Chef at the Sussex Ox, a well-known pub in a beautiful downland setting, where I worked for two rewarding years. During my leadership of the kitchen at the Ox, we achieved ‘Finalist of Sussex Eating Experience 2016’ and personally I myself was voted ‘Sussex Chef Finalist 2016’.

Michael’s culinary vision

I am delighted to to become the Head Chef of The Star Inn, Alfriston, with its impressive heritage and ancient history, and I can’t wait to show off my culinary skills designing new seasonal menus. Serving delicious and inventive dishes to local visitors and travellers alike will be a privilege and I am looking forward to the challenge.

It’s great being at the heart of this beautiful and close- knit village, with seasonal local ingredients on the doorstep. I am developing a willing strong team around me, and it is a pleasure to cook in such a large and well-equipped kitchen.
When I’m not wearing my chef whites my interests in life are fishing rugby, cricket and football.
